1x Schild Estate Three Springs Shiraz 2021

This particular vineyard, in the Rowland Flat area of the Barossa, sits at 380m above sea-level. At this altitude, Barossa vineyards traditionally produce much lower yields creating highly concentrated fruit of exceptional quality. From the first whiff it's quite apparent, this is a really smart wine. A perfumed nose of the expected dark fruits with floral elements of rose petal and violets. On the palate, juicy plums, dark chocolate, pepper, spice and, of course, a long, smooth, oak-driven finish. This drop is as intense as it is complex and will continue to impress for many years to come. Very, very impressive.

Welcome to this producer’s flagship wine. All parents say they don’t have a favourite child, but we’re pretty sure this would be the one for our star McLaren Vale producer. Picking the premium, low-yielding fruit from their vineyards, they’ve succeeded in creating a magnificently concentrated wine. There’s some parcels of fruit that go into American oak, and some in French. Some new and some old. It hits all the notes and comes together in a symphony of black and blue fruits. C’mon, those scores from the experts really speak for themselves on this one. But if we were to give you a short review from our team, it’d be this: don’t pass on the opportunity to get this in your glass.

Blewitt Springs holds sacred status in McLaren Vale for damn good reason. This sub-region's ancient soils and elevation create something special that winemakers chase relentlessly. Deep crimson-purple colour hints at the concentration within, but what follows defies expectations for McLaren Vale power. Instead of brute force, you get well-thought-out, effortless dark berry fruits flowing across a supple yet solid palate. The alcohol? Not even worth mentioning - it's integrated so seamlessly you'd never know it's there. That's the hallmark of exceptional fruit meeting skilled winemaking. When both elements align perfectly, technical details fade into background noise. You're left with pure drinking pleasure - dark berries expressing themselves with grace rather than grunt, texture without heaviness, structure without astringency. Great fruit and great winemaking. Sometimes the simplest summary says everything that needs saying.

Each parcel of fruit is treated as its own, respecting the nuances that might arise in each crop. It’s then carefully fermented to preserve the fruit purity. 18 months in new and seasoned French oak has kicked this bad boy into luxury status, and has set it up for years of ageing potential. It rolls across the tongue with focused dark berries and red fruits, before showing you its more brooding side: savoury cured meats, olive tapenade, dark chocolate and sweet spices. It’s easy to see why Kilikanoon are proud to craft this wine as their love letter to the Clare.

Off-dry riesling is all about balance, balancing the natural acid and the sweetness. Who else would we trust with such a precarious balancing act? Grosset. Of course. This is bang-on! Rich and flavoursome but not overly sweet, with piercing acid and gorgeous texture. This is as good as it gets in Australia.

Wow. Pretty much what making wine in this country is all about. An iron fist in a velvet glove. There's a reason the name carries so much weight.
The 2017 vintage brought near on perfect growing conditions to Hilltops: sun when you want it, rain when you need it. The terroir naturally provides complexity and elegance, but the power and longevity of this wine can only be attained with restrained and considered winemaking - something Clonakilla have in spades. Bright red and blue fruit, peppery spice and velvety tannins all wrapped around a backbone of lively acid and sweet oak leave the drinker wanting for nothing, except, perhaps another glass. Share it with those you love, or drink it in front of those you don't - this is one to show off.
