Mercurey is famous for producing some of the most robust and structured red wines in the entire Côte Chalonnaise, and 'Les Saumonts' is one of its most highly regarded Premier Cru sites. The steep, rocky slopes here provide incredible drainage and sun exposure, leading to grapes with phenomenal concentration and depth. Domaine Ninot treats this prized terroir with the utmost respect, utilising organic farming and minimal intervention in the winery to let the site speak for itself.
