Sparkling reds are an interesting and unique Aussie addition to the wine world. While usually dominated by shiraz as the principal grape, Hollick’s Coonawarra merlot fruit really shows the potential range of the quintessential Aussie summer drink! This vintage shows great depth with black cherries, brambles and notes of chocolate on the nose and cherries, a touch of cola and dense, rich mulberries on the palate. There’s a subtle oak influence too, which will help the wine age extremely well. If you’ve never tried a sparkling red before, this is an excellent place to start.
