1x Thompson Estate The Specialist Chardonnay 2021

White — Chardonnay

Margaret River — Australia

This elite chardonnay from Thompson Estate was handpicked with only the best parcels of fruit making the final cut. After a gentle whole bunch press, the wine was transferred to a combination of brand new and seasoned french oak barrels for a good 9 months. This wine is precise, clean and crisp with elegant aromatics of nectarine, green apple and orange blossom. A full flavoured palate boasts citrusy vibes and ripe peaches surrounded by a lingering oak spice. It'll only promise to develop in the bottle, so if you like to test your patience, you're in good hands here.

You'd pay $120 full price.

1x Domaine Yvet & Laurent Vocoret Chablis AOC Chardonnay 2022

White — Chardonnay

Burgundy — France

The complexity of Chablis is unmatched not just in chardonnay but amongst the great wines of the world. There is so much to discover here – a wine brimming with intricacies and curiosities. Slatey mineral drive underpins the acid from start to finish. Rich, shapely fruit gives the wine palate weight and breadth, and the scintillating acid sets the mouth alight. A brilliant wine from a relatively unsung hero of the region.

1x Seville Estate Single Vineyard Gembrook Chardonnay 2021

White — Chardonnay

Yarra Valley — Australia

There is a purity and preciseness to this wine that is immediately apparent. The fruit sits in the cooler space with green apple, lime juice, a bit of under-ripe pear - evidence of an age-worthy wine for sure. A bit of nutty nuance and lemon curd gives shape to the wine mid palate. The hero right now, though, is the scintillating acidity, it rips across the palate, tearing through the finish (another tick in the cellaring column). It's no wonder Halliday anointed this producer Australia's best; it never puts a foot wrong.

You'd pay $90 full price.

Frequently Asked Questions

This collection demonstrates Chardonnay's remarkable adaptability across three distinct terroirs and winemaking philosophies. The Chablis represents the grape's mineral-driven, unoaked expression from Burgundy's cool climate, while Thompson Estate showcases Australia's rich, textured style perfect for food pairing. Seville Estate's single vineyard approach highlights how specific site selection can create unique flavour profiles that reflect both place and vintage character.

Each region imparts its signature on the Chardonnay grape through climate and soil differences. Chablis from Burgundy delivers crisp minerality thanks to its limestone-rich Kimmeridgian soils and cool continental climate. Australian regions typically produce richer, more tropical fruit flavours due to warmer conditions, with Thompson Estate likely showing stone fruit richness and Seville Estate's cool-climate Victorian site contributing elegant citrus and pear notes with refined oak integration.

The beauty of this trio lies in covering the full spectrum of Chardonnay food pairing possibilities. The crisp Chablis is perfect with oysters, seafood, and goat's cheese, as its minerality cuts through rich textures. Thompson Estate's richer profile complements creamy pasta dishes, roasted chicken, and aged hard cheeses. Seville Estate's elegant structure works beautifully with lobster, pork tenderloin, or mushroom risotto where you want both richness and finesse.

These producers represent excellence in their respective regions through consistent quality and recognition. Seville Estate has earned Halliday Wine Companion acclaim with 93 points and comes from a Five Red Star rated winery, indicating top-tier Australian production. The Chablis represents authentic French terroir from established Burgundian traditions, while Thompson Estate's Gold medal at Wine Show of WA demonstrates technical excellence. Together, they offer both heritage and innovation in Chardonnay winemaking.

Each style benefits from slightly different serving approaches to maximise their unique characteristics. Serve the Chablis well-chilled at 8-10°C to preserve its crisp minerality, while the richer Australian styles can be served at 10-12°C to allow their complex flavours to open up. Store all bottles on their side in a cool, dark place, and consider decanting the more complex styles 30 minutes before serving to allow their oak and fruit integration to fully express itself.
