Why do we love this wine?

With a nod to the northern Rhone, the By Farr Shiraz is co-fermented with a small portion of vigonier, adding richness and lift. But this wine, truly is a masterpiece of its own, coming from the original By Farr vineyard that was planted in 1994, and displaying the signature use of whole-bunch, it is a testament to the skill and prowess of this winemaking family. Best enjoyed over a long dinner, in which this wine will morph, open up and bloom, revealing itself with layer up layer of complexity. A beauty that will age gracefully.

This Shiraz is co-fermented with a small portion of viognier, a technique borrowed from the northern Rhone Valley that adds aromatic lift and textural richness. The use of whole-bunch fermentation creates a more elegant, spice-driven profile compared to the fruit-forward style many associate with Australian Shiraz. This approach, combined with fruit from the original 1994 vineyard plantings, showcases a more European-influenced winemaking philosophy.

This wine truly shines when given time and attention during a long dinner service. Decant it 30-60 minutes before serving to allow it to open up, and serve at cellar temperature around 16-18°C. As it sits in your glass, you'll notice it continuously evolving, revealing new layers of complexity throughout the meal. Pair it with rich, slow-cooked dishes like braised lamb or aged beef that can match its full-bodied intensity.

Geelong's cool maritime climate, influenced by Port Phillip Bay, creates ideal conditions for producing elegant, structured Shiraz with natural acidity. The region's volcanic soils and moderate temperatures allow for extended ripening periods, developing complex flavour compounds while maintaining freshness. This terroir expression is evident in the wine's ability to show both power and finesse, distinguishing it from warmer climate Australian Shiraz regions.

While approachable now, this wine is built for graceful ageing and will reward patience. The whole-bunch fermentation and quality of the 2022 vintage provide excellent tannin structure that will integrate beautifully over 8-12 years. If drinking young, decanting is essential to soften the tannins and unlock the wine's complexity. For optimal enjoyment, consider cellaring until 2027-2030 when all elements will be perfectly harmonised.

The wine's rich blackberry and raspberry fruit, enhanced by oak and the viognier co-fermentation, pairs beautifully with grilled or roasted red meats, particularly lamb with herbs or beef with peppercorn sauce. The spicy whole-bunch character complements dishes with warming spices like Moroccan tagines or Indian curries. For cheese pairings, try aged hard cheeses like vintage cheddar or Parmigiano-Reggiano that can stand up to the wine's intensity while highlighting its fruit complexity.
