Why do we love this wine?

Wine by Farr and the family behind the label completely, in every sense of the word, epitomise true vignerons. Following the french way of a 'domaine', everything is done in house, from the growing of the grapes, to the winemaking, bottling and maturing. Tout Pres is one of four single vineyard pinot produced by the family and touted as the top offering. Translating to very cosy, a reference to the close planting of the vineyard, Tout Pres is often the most intense and age-worthy from the Farr stable, and is supported by 100% whole bunch fermentation and 100% new oak. This is a true show stopper and a necessary experience for any wine lover or collector. Always special, and always limited. Don't hesitate here.

Tout Pres represents the pinnacle of By Farr's single vineyard offerings, distinguished by its close-planted vineyard configuration that creates intense fruit concentration. The name translates to 'very cosy', referencing this tight vine spacing which forces the plants to compete for nutrients, resulting in smaller yields but more concentrated flavours. Combined with 100% whole bunch fermentation and 100% new oak treatment, this creates the most structured and age-worthy wine in their stable, capable of developing complex tertiary characters over decades.

Whole bunch fermentation is a traditional Burgundian technique where entire grape clusters, including stems, are fermented together rather than destemming first. This method adds structural tannins from the stems and creates more complex aromatics, particularly enhancing the wine's spice and herbal notes. For Pinot Noir, it's particularly beneficial as it adds textural complexity without overwhelming the delicate fruit character, while the stems contribute natural acidity that helps preserve freshness and extends ageing potential.

Given its reputation as By Farr's most age-worthy offering and the 100% new oak treatment, this 2022 Tout Pres will benefit from 5-8 years of cellaring to fully integrate the oak and develop secondary characteristics. The combination of whole bunch fermentation and new oak provides the structural backbone necessary for long-term ageing, with the wine likely reaching peak drinking between 2028-2035. However, the wine's elegant, lighter style means it can also be enjoyed now with decanting for those who prefer primary fruit expression.

The raspberry and vanilla notes, combined with the wine's light-bodied elegance and new oak influence, make it ideal for duck breast with cherry sauce or roasted quail with herbs.
