Why do we love this wine?

Rarely do you open wine when it’s in the perfect drinking window, but alas, we have one for you. With almost a decade in the bottle, its tannins have softened to perfection. Robust and vibrant dark berries are still at the core, but the layers are opening up, offering roasted notes, cigar box, olive tapenade and mineral warmth. Cabernet sauvignon with perfectly aged, fine tannins is genuinely such a pleasure; it makes you wonder why we don’t always wait (nearly) ten years.

Frequently Asked Questions

After nearly a decade of bottle ageing, the wine's tannins have evolved from their initially firm structure to a beautifully integrated softness that allows all flavour components to harmonise. This extended cellaring period has allowed the primary fruit characteristics to develop complex secondary and tertiary notes like cigar box and olive tapenade, while maintaining the wine's core vibrancy. Coonawarra Cabernet Sauvignon is renowned for its exceptional ageing potential, and this wine demonstrates why patience in cellaring premium Australian reds is so rewarding.

Coonawarra's famous terra rossa soil - a thin strip of red clay over limestone - provides exceptional drainage and mineral complexity that Cabernet Sauvignon thrives in. The region's cool climate allows for extended ripening periods, developing intense flavours while retaining natural acidity and structured tannins. This unique terroir combination produces Cabernet Sauvignons with distinctive mineral warmth and the ability to age gracefully for decades, as evidenced by this wine's remarkable evolution over ten years.

These complex flavours emerge through the interaction between the wine's natural compounds and extended bottle ageing. The chocolate and vanilla notes often develop from the wine's interaction with oak during maturation, which becomes more integrated over time. Fruitcake characteristics arise as the primary dark berry fruits concentrate and meld with spice elements, creating those rich, dried fruit complexities. The full-bodied nature of this Cabernet provides the structural foundation needed to support and showcase these evolved flavour profiles.

A 96-point rating from Wine Orbit places this Cabernet Sauvignon in the 'outstanding' category, indicating exceptional quality that represents the pinnacle of winemaking achievement. Wine Orbit is highly respected for their rigorous tasting methodology and deep understanding of Australian wine regions. This score, combined with the Five Stars rating, suggests the wine demonstrates perfect balance, complexity, and regional typicity that sets it apart from its peers, making it a benchmark example of aged Coonawarra Cabernet Sauvignon.

Decant this wine 1-2 hours before serving to allow the complex aromatics to fully express themselves after years of bottle development. Serve at 16-18°C to showcase both the fruit intensity and the evolved savoury characteristics like olive tapenade and roasted notes. The wine's full-bodied structure and softened tannins make it perfect for pairing with rich dishes like aged beef, lamb, or strong cheeses that can complement its mineral warmth and cigar box complexity.
