As Hollick's flagship wine, there's a fair bit to love here. Favourites for good reason, they hit the nail on the head when it comes to crafting beautiful cabernets which the region champions.

Why do we love this wine?

All of their reds see a little bottle age, and we’re looking at 2.5 years for this stunner. That comes after a good 18 months in premium French oak barrels. You do the math, Mofo. It’s rich and intense, with a glut of sophistication. Toasty spices and a touch of anise meet the menthol, blackcurrant core of this beauty. There’s a little touch of tobacco and earth which are starting to reveal themselves, promising a long and interesting life ahead. Superbly bold, a perfect reminder of Coonawarra’s charming force.

Frequently Asked Questions

Coonawarra's famous terra rossa soil over limestone creates ideal conditions for Cabernet Sauvignon, producing wines with distinctive eucalyptus and menthol characteristics alongside intense blackcurrant flavours. This Hollick Ravenswood showcases these regional hallmarks beautifully, with the menthol notes complementing the rich fruit core. The region's cool climate allows for extended ripening, resulting in the sophisticated tannin structure and complexity evident in this wine.

With its premium French oak maturation and additional bottle age, this wine is already showing early secondary development with emerging tobacco and earth notes. These characteristics suggest excellent cellaring potential of 10-15 years from vintage. The wine's full-bodied structure and high-quality ratings indicate it will continue to evolve gracefully, developing more complex tertiary flavours while maintaining its core blackcurrant intensity.

The wine's rich, full-bodied profile and coffee-chocolate notes make it perfect for robust red meat dishes like grilled ribeye or slow-braised lamb shanks. The toasty oak and spice elements complement dishes with earthy flavours such as mushroom risotto or aged hard cheeses. The wine's intensity can also stand up to bold flavours like char-grilled vegetables or dark chocolate desserts.

The exceptional ratings from Wine Orbit (97pts), Patrick Eckel (96pts), and Halliday Wine Companion (95pts) reflect the wine's outstanding quality and typicity. Such consistent high scores across different palates indicate exceptional winemaking technique and ideal vintage conditions. The single vineyard designation also suggests fruit from a particularly well-suited site, allowing for greater expression of terroir and concentrated flavours.

The 18 months in premium French oak barrels adds layers of complexity beyond simple fruit flavours, contributing the toasty spices and subtle vanilla notes that integrate beautifully with the wine's natural characteristics. French oak is prized for its tight grain and elegant tannin contribution, which enhances rather than overwhelms the fruit. The extended oak contact followed by bottle aging allows these elements to marry harmoniously, creating the sophisticated profile this wine displays.
