Why do we love this wine?

Cab sauv is to Margs, what shiraz is to the Barossa and we just love when a wine isn't shy. Full in body, big in tannin and oozing flavour, cabernet is often built around the structure and power of its tannin and here there is plenty of them which will allow a wine to age with grace. It is these gorgeous tannins that yearn for a juicy steak or roast to tame and compliment them, so fire up the barbie, invite some of your nearest and dearest over and round up those tannins.

Jeni Port

"You’ve got to love a happy ending – and a mighty enjoyable happy ending at that. The 2021 vintage in Margaret River was mixed weather-wise to start, but for the later ripening Cabernet Sauvignon, it was all good timing. The results are here to enjoy in a well-structured and detailed Cabernet that shows the strengths of Margaret River’s number one red grape. The aroma sets the scene in blueberries, black and red fruits, crushed herbs, black pepper and chocolate lifted aromatically by attractive florals. Three years old, fresh and alive, the palate is laced in fine tannins, the perfect playing field for some persistent and ripe black, red and blue berry, soft-edged herbals and warm oak-led spices to indulge your senses." - Jeni Port, Wine Pilot

Frequently Asked Questions

This highlights an interesting aspect of wine perception - while the description emphasises the wine's bold tannin structure and powerful character typical of Margaret River Cabernet, the technical classification considers it medium-bodied. This suggests a wine that delivers intensity through structure and complexity rather than sheer weight, making it more approachable while young yet still possessing the backbone for graceful ageing.

Margaret River's maritime climate and unique terroir produce Cabernets with a distinctive balance of power and elegance. The region's consistent temperatures and ocean influence help retain natural acidity while developing complex flavours like the tomato leaf herbaceousness found in this wine. This creates wines that combine Bordeaux-style structure with distinctly Australian fruit intensity.

Tomato leaf is a classic marker of quality Cabernet Sauvignon, indicating optimal ripeness and varietal character. These herbaceous notes provide a savoury counterpoint to the rich blackcurrant fruit, while the spice elements bridge the gap between fruit and earth. This combination creates the textured, savoury profile that makes the wine so food-friendly, particularly with grilled meats where these herbal notes echo the char and smoke.

A 96-point rating places this wine in exceptional territory, suggesting it represents outstanding value and craftsmanship from Jilyara. Wine Pilot's high score, combined with strong Vivino ratings across all vintages, indicates consistent quality from this producer. Such recognition for a 2021 vintage also suggests the wine is drinking beautifully now while having excellent ageing potential.

While this wine is clearly enjoyable now given its accolades, the substantial tannin structure mentioned suggests excellent cellaring potential of 8-12 years. Margaret River Cabernets typically hit their stride around 5-7 years when the tannins integrate fully with the fruit. However, the wine's current balance means you can enjoy it immediately with proper decanting, or cellar it to develop more complex tertiary flavours.
