This minimal manipulation approach often produces wines with greater complexity and authentic regional expression.

While this Burgundy is drinking beautifully now with its bright fruit and approachable tannins, it has at least a decade of prime drinking ahead. Burgundian Pinot Noir typically develops secondary characteristics like earthy mushroom, leather, and game notes as it ages. The old vine fruit provides excellent structure for ageing, and the firm tannins will gradually soften and integrate. For those who enjoy more developed flavours, consider cellaring half your bottles for 5-8 years.

Vielles Vignes translates to 'old vines' in French, typically referring to vines over 25-30 years old. Older vines produce smaller yields but more concentrated, complex fruit due to their deep root systems accessing diverse soil layers. In Burgundy, old vines are particularly prized as they've adapted to their specific terroir over decades, producing grapes with greater mineral complexity and flavour intensity. This concentration is evident in L'Olivier's bright fruit character and structured palate.

This wine's medium body and bright acidity make it incredibly food-friendly, particularly with classic Burgundian cuisine like coq au vin or beef bourguignon. The blackberry and red currant notes complement roasted duck, lamb, or mushroom-based dishes beautifully. Its approachable tannins won't overpower lighter proteins like salmon or pork tenderloin. Fixin sits at the northern end of the Côte de Nuits, often overshadowed by famous neighbours like Gevrey-Chambertin, making it excellent value for authentic Burgundy. L'Olivier vineyard benefits from ideal southeast exposure and limestone-rich soils that impart the mineral backbone characteristic of quality Burgundy.
