Why do we love this wine?

This patient approach is particularly rewarding with premium Coonawarra Cabernet, where the region's terra rossa soils provide wines with exceptional ageing potential.

Coonawarra's famous terra rossa soil strip creates perfect conditions for world-class Cabernet Sauvignon production. The iron-rich red soil over limestone provides excellent drainage while retaining moisture, and the cool maritime climate ensures slow, even ripening. These conditions allow Cabernet to develop its signature blackcurrant intensity while maintaining the herbaceous complexity that defines great examples from this region.

Hand-pruning allows precise control over vine vigour and berry concentration, while low yields force the vine to channel all its energy into fewer bunches. This results in grapes with intensely concentrated flavours and higher skin-to-juice ratios, creating wines with greater depth, colour, and tannin structure. The meticulous vineyard work directly translates to the wine's exceptional complexity and ageing potential.

New French oak barrels contribute subtle vanilla, spice, and toast notes while allowing controlled micro-oxygenation that softens tannins and integrates flavours. French oak is prized for its tight grain and elegant influence compared to American oak, complementing rather than overwhelming Cabernet's natural fruit character. After nearly a decade, these oak elements have fully married with the wine's blackcurrant and herbaceous notes.

This wine has reached its optimal drinking window after nearly ten years of careful cellaring, having evolved from its youthful power into perfect balance and complexity.
