Why do we love this wine?

The Schubert Theorem shiraz is a unique horse in the Standish stable, being the only cuvée which sees some egg maturation, there is nuance and sophistication here — no surprise considering the wine is sourced from various sections of the Roennenfeldt Road Vineyard in Marananga — a vineyard of deep, brown earth splintered with various shelves of quartz. Indeed, Dan Standish has truly made a wine that is the equal sums of its parts.

Frequently Asked Questions

The Schubert Theorem is the only wine in Standish's portfolio to undergo egg maturation, which provides a distinctive textural element compared to traditional barrel ageing. Concrete or ceramic eggs allow for gentle micro-oxygenation without imparting oak flavours, creating a more nuanced wine that maintains fruit purity while developing complexity. This technique, combined with fruit from the quartz-rich Roennenfeldt Road Vineyard, results in a Shiraz that balances power with sophistication.

The Roennenfeldt Road Vineyard's deep brown earth interspersed with quartz shelves creates ideal conditions for premium Shiraz production. These soils provide excellent drainage while the quartz reflects heat back to the vines, intensifying fruit concentration and contributing to the wine's rich blackberry and cherry characteristics. The mineral complexity from this terroir, combined with Marananga's warm climate, produces the full-bodied structure that defines great Barossa Shiraz.

With scores of 97 points from The Wine Front and recognition from Robert Parker, this Shiraz represents the pinnacle of modern Australian winemaking. The combination of premium vineyard sourcing, innovative egg maturation, and Dan Standish's meticulous approach creates a wine that showcases both power and finesse. Critics particularly praise how the wine achieves complexity without sacrificing the bold fruit character that makes Barossa Shiraz legendary.

The rich blackberry and cherry flavours, combined with charred notes from the winemaking process, make this Shiraz perfect for grilled red meats, particularly lamb with rosemary or beef with pepper crusts. The wine's full-bodied structure can handle robust flavours like aged cheeses, mushroom-based dishes, or even spicy barbecue. The nuanced character from egg maturation also allows it to pair beautifully with game meats or rich stews.

Given the exceptional quality ratings and Standish's reputation for producing age-worthy wines, this 2021 Shiraz has excellent cellaring potential of 15-20 years. The full-bodied structure, combined with the unique egg maturation process, provides a solid foundation for long-term development. While delicious now, the wine will continue to evolve, with the fruit flavours integrating further and developing secondary characteristics like leather, tobacco, and spice over time.
