Why do we love this wine?

One of our go-to Margaret River producers has come up with the goods again! We love everything they do with cabernet and are always yearning for more. This one is from the strong 2020 vintage and boasts a big 95 points from Halliday. It’s super smooth, stylishly elegant and quite lifted on the nose with aromas of cherries and plums. Like all good Margs cab, it also has those herbal and spicy elements interlaced throughout. As things went so well in the vineyard in 2020, the need wasn’t there to drown the wine in oak. It’s there, but it’s quite subtle. The fruit speaks for itself and it is oh so eloquent.

Frequently Asked Questions

The 2020 vintage was exceptional in Margaret River, allowing winemakers to rely more heavily on pristine fruit quality rather than heavy oak intervention. This resulted in wines with greater elegance and fruit expression, where the natural characteristics of the cabernet sauvignon could shine through. The excellent growing conditions meant the grapes achieved optimal ripeness and concentration, contributing to this wine's impressive 95-point Halliday rating.

This Eightfold perfectly demonstrates Margaret River's signature cabernet profile with its combination of dark fruit flavours like cherries and plums, complemented by distinctive herbal and spicy elements. The region's maritime climate and gravelly soils contribute to the wine's elegant structure and complexity. Margaret River cabernets are renowned for their ability to balance power with finesse, and this medium-bodied expression exemplifies that regional character beautifully.

While the specific meaning isn't detailed, premium wine names like 'Eightfold' typically represent a winemaker's philosophy or approach to crafting exceptional wines. Given Wills Domain's reputation as a five-star rated winery and their consistent quality, this likely represents their multi-layered approach to winemaking. The name suggests complexity and depth, which aligns with the wine's textured, savoury style and its ability to express multiple flavour dimensions from fruit to earth to spice.

Margaret River Cabernet Sauvignon from excellent vintages like 2020 typically develops beautifully over 8-15 years. The wine's current lifted aromatics of cherries and plums will evolve into more complex secondary flavours, while the earthy, tobacco, and mulberry notes will become more integrated and pronounced. The subtle oak treatment means the wine won't be overwhelmed by wood flavours as it matures, allowing the fruit and terroir characteristics to remain prominent throughout its evolution.

The wine's medium body and savoury, textured profile make it incredibly food-friendly, particularly with red meats and rich, earthy dishes. The herbal and spicy elements complement lamb with rosemary, beef with mushrooms, or aged hard cheeses beautifully. The tobacco and earthy notes also pair excellently with game meats or dishes featuring umami-rich ingredients like aged balsamic or sun-dried tomatoes, while the fruit core can handle slightly spicier cuisines without being overwhelmed.
