Why do we love this wine?

This 100% mourvèdre rosé is specifically sourced from Blewitt Springs, a highly sought after sub-region of McLaren Vale renowned for high quality fruit. Lees stirring in older french oak barrels throughout the cool fermentation brings added complexity and a depth of flavour which is a constant in every wine from Mofo favourite producer, Ulithorne. Look out for fresh herbaceous notes on the bouquet, gorgeous redcurrant and fresh strawberries over the palate, and a long, lively finish.

The elevation provides cooler nights that preserve natural acidity, while the maritime influence from nearby Gulf St Vincent moderates temperatures during ripening. These factors combine to produce grapes with intense flavour concentration and natural balance, explaining why this sub-region commands premium prices and recognition from top producers.

Lees stirring (bâtonnage) during fermentation adds textural richness and complexity without overwhelming the delicate fruit flavours typical of rosé. The older French oak barrels contribute subtle vanilla and spice notes while allowing controlled micro-oxygenation that enhances mouthfeel. This technique, borrowed from premium white wine production, creates a more sophisticated rosé with greater depth and a silky texture that distinguishes it from simpler tank-fermented styles.
