Why do we love this wine?

This is classic terroir driven Champagne. There is so much mineral complexity packed into the glass. There's tart apple peel, winter pear, and some puckering citrus at the fore, with broad mid-palate richness. Expressive, powerful, and elegant.

Frequently Asked Questions

This is authentic Champagne from the Champagne region of France, made using the traditional méthode champenoise with secondary fermentation in bottle. The terroir-driven approach means the unique chalk soils and cool climate of Champagne impart distinctive mineral complexity that you simply cannot replicate elsewhere. The full-bodied palate weight indicates extended lees ageing, which develops those characteristic brioche and yeasty notes that separate true Champagne from other sparkling wines.

NV stands for 'Non-Vintage', meaning this Champagne is a blend of wines from multiple years rather than a single harvest. This blending technique allows the producer to maintain a consistent house style year after year, balancing the characteristics of different vintages to achieve optimal flavour and complexity. Most Champagne houses produce NV as their flagship style, as it represents their signature taste profile and offers excellent value compared to vintage releases.

Serve well-chilled at 6-8°C in proper Champagne flutes or tulip glasses to concentrate the aromatics and preserve the fine bubbles. The full-bodied nature and rich complexity make this suitable for food pairing - try it with oysters, aged cheeses, or roasted poultry where the mineral backbone can complement rich flavours. Allow it to warm slightly in the glass to fully appreciate the winter pear and citrus notes described in the tasting profile.

The mineral complexity and tart apple character make this excellent with seafood, particularly raw preparations like sashimi or ceviche where the citrus notes provide a natural bridge. The brioche flavours from lees ageing pair beautifully with soft cheeses like brie or camembert, while the full body can stand up to richer dishes like lobster thermidor or roasted chicken. The green apple and lemon zest notes also complement Asian cuisine, especially dishes with ginger or light soy-based sauces.

While this NV Champagne is ready to drink now, it can be stored for 3-5 years in proper cellar conditions (cool, dark, lying down). Unlike vintage Champagnes, NV releases are designed for immediate enjoyment and won't significantly improve with extended ageing. However, the full-bodied style suggests good structure that will maintain its quality over this timeframe. Store away from light and temperature fluctuations to preserve the delicate bubbles and fresh fruit characteristics.
