Tiny production. About 400 cases a year. One of Australia's greatest cool-climate wines. This is Bindi at their most precise and considered. Wild fermented, ten months on full lees in French oak, minimal intervention throughout. The kind of winemaking that produces something genuinely rare and worth seeking out.

Why do we love this wine?

Fragrant and completely compelling on the nose - lemon, white flower, spice and a nutty wet stone complexity that draws you straight in. The palate is fresh and intensely focused, with a gentle creaminess giving way to vibrant fruit, fine acidity and a pure, long finish that just keeps building. 95 points from Halliday for the previous vintage. The 2024 according to winemaker Michael Dhillon will "improve for five plus years and live well beyond." Decant it. Give it air. Then appreciate something genuinely special.

Frequently Asked Questions

This Bindi Chardonnay showcases the cool-climate elegance of the Macedon Ranges, expressing minerality and restraint rather than the tropical fruit and oak dominance found in warmer regions. The 'wet stone complexity' and fine acidity reflect the volcanic soils and high altitude of this premium Victorian region, creating a more Burgundian style that emphasises terroir over winemaking intervention.

Decanting allows this complex Chardonnay to open up and reveal its full aromatic potential, particularly the nutty and mineral characteristics that define premium cool-climate examples. The textural style and medium body benefit from aeration, which softens any initial tightness and allows the interplay between fruit, acidity, and subtle oak to harmonise beautifully before serving.

While delicious now, this Chardonnay will develop greater complexity over the next five years as the vibrant fruit integrates with its mineral backbone and any oak influence becomes more seamless. Premium Macedon Ranges Chardonnays like this often peak between 3-7 years, developing honeyed notes and deeper texture whilst maintaining their characteristic freshness and length.

The wine's minerality and fresh acidity make it perfect for seafood dishes, particularly grilled fish with herbs or creamy shellfish preparations. The medium body and textural elements also complement roasted chicken, pork tenderloin, or aged hard cheeses, while the lemon and white peach flavours enhance dishes featuring these ingredients or similar citrus and stone fruit elements.

Scores of 96 points from James Suckling and 95 from The Wine Front place this among Australia's elite Chardonnays, indicating exceptional balance, complexity, and ageing potential. These ratings reflect not just immediate drinking pleasure but the wine's ability to express its terroir distinctively, with the consistency of high scores across different critics confirming its outstanding quality and winemaking precision.
