Why do we love this wine?

Domaine Roland Lavantureux has been growing grapes in Chablis for generations, but it wasn’t until 1979 that they started bottling their own wine. Quality over quantity is the key here, from a small and distinguished Grand Cru parcel known as Vaudésir. The wine is intensely concentrated and alive with intriguing notes of beeswax, white blossoms and textural nuances. The signature Chablis backbone of acid, striking minerality and well-integrated French oak makes for an elegant and memorable finish. It’s time to polish the good glassware and get excited.

Vaudésir is one of only seven Grand Cru vineyards in Chablis, representing less than 2% of total Chablis production. This prestigious site sits on the right bank of the Serein River with optimal south-facing exposure and unique Kimmeridgian soil rich in fossilised oyster shells. The combination of this ancient marine soil and the vineyard's microclimate produces wines with exceptional concentration and the distinctive mineral backbone that Chablis is renowned for worldwide.

The 2021 vintage in Burgundy was marked by challenging spring frosts followed by a warm, dry summer that required careful vineyard management. Despite lower yields, the surviving grapes developed excellent concentration and balance. For Chablis specifically, 2021 produced wines with vibrant acidity and intense minerality, making it an excellent vintage for Grand Cru sites like Vaudésir that could handle the stress and concentrate flavours beautifully.

Chablis represents Chardonnay in its purest form, shaped by cool climate conditions and limestone-rich soils that emphasise minerality over fruit. Unlike warmer climate Chardonnays that showcase tropical fruits and butter, this Grand Cru expresses citrus zest, wet stones, and subtle beeswax notes. The French oak integration is restrained, allowing the terroir to speak rather than overwhelming the wine's natural elegance and razor-sharp acidity.

This Grand Cru's full body and mineral intensity make it perfect for rich seafood dishes like lobster thermidor, pan-seared scallops, or fresh oysters from Belon. The wine's acidity cuts through creamy sauces while its oak integration complements dishes with subtle herb preparations. Traditional Burgundian pairings include escargot, coq au vin blanc, or aged Époisses cheese, where the wine's complexity matches the dish's sophistication.

Grand Cru Chablis from quality producers like Domaine Roland Lavantureux can age gracefully for 10-15 years, developing honeyed complexity while maintaining its signature minerality. The 2021's natural acidity and concentration suggest it will evolve beautifully, transitioning from its current citrus and floral notes to more complex flavours of nuts, brioche, and deeper mineral expressions.
