Why do we love this wine?

The chardonnays of Chablis are among the greatest white wines in the world. They’re age-worthy, multi-dimensional, and supremely sophisticated (but that doesn’t mean you need to be sophisticated to drink them - trust us, we know from experience). The 2021 Domaine Vincent Wengier has, first and foremost, ripping acidity. It gathers the wine perfectly and delivers a brilliant, enduring finish. Taste green apple, zesty lime, whole lemon, and a bit of briny maritime salinity on the back-palate. Some lees work gives it real breadth and presence on the palate. It will pair beautifully with creamy pasta, a hearty salad, fatty meats - but it’ll go best with oysters. A bit of salty sea-spray and tart lemon juice will set this wine on fire.

Frequently Asked Questions

Chablis represents Chardonnay in its purest form, grown on ancient Kimmeridgian limestone soils that impart distinctive mineral complexity. Unlike many New World Chardonnays, Chablis typically sees minimal oak influence, allowing the grape's natural acidity and terroir expression to shine. The cool climate of Burgundy's northernmost region produces wines with razor-sharp acidity and a signature saline minerality that's unmistakably Chablis.

This 2021 Domaine Vincent Wengier Chablis has excellent ageing potential thanks to its ripping acidity and structured backbone. While delicious now, it will develop greater complexity over 5-8 years, with the bright citrus notes evolving into honeyed richness while maintaining that characteristic mineral spine. The lees work mentioned in the tasting notes suggests good textural development that will reward patient cellaring.

The marriage between Chablis and oysters is legendary, rooted in both geography and flavour chemistry. Chablis vineyards sit atop ancient seabeds filled with fossilised oyster shells, creating a natural affinity. This wine's briny maritime salinity and zesty lime character mirror the ocean's essence, while its crisp acidity cuts through the oyster's richness and enhances the shellfish's sweet, mineral flavours.

Lees work refers to leaving the wine in contact with dead yeast cells after fermentation, which adds texture, complexity, and subtle flavours. In this Chablis, the lees contact creates the 'real breadth and presence on the palate' mentioned in the description. This technique adds a creamy, almost bread-like quality without masking the wine's mineral precision, giving it more weight while maintaining Chablis's signature elegance.

While oysters are the classic match, this Chablis's textural complexity and bright acidity make it incredibly food-friendly. The wine's apple and citrus notes complement roasted chicken or pork beautifully, while its mineral backbone pairs excellently with goat's cheese or herb-crusted fish. Try it with Asian cuisine - the acidity cuts through rich coconut curries, and the mineral notes enhance delicate steamed dishes.
