Why do we love this wine?

The complexity of Chablis is unmatched not just in chardonnay but amongst the great wines of the world. There is so much to discover here – a wine brimming with intricacies and curiosities. Slatey mineral drive underpins the acid from start to finish. Rich, shapely fruit gives the wine palate weight and breadth, and the scintillating acid sets the mouth alight. A brilliant wine from a relatively unsung hero of the region.

Frequently Asked Questions

Chablis represents Chardonnay in its purest form, grown on ancient Kimmeridgian soils rich in fossilised oyster shells. This unique terroir creates the signature mineral-driven character that sets it apart from buttery, oaked Chardonnays found elsewhere. The Vocoret family's traditional winemaking approach preserves these distinctive slatey, mineral qualities that make Chablis one of the world's most revered expressions of Chardonnay.

While Chablis boasts famous names like Dauvissat and Raveneau, smaller family estates like Vocoret often produce exceptional wines without the same recognition or price premiums. The Vocoret family has been quietly crafting outstanding Chablis for generations, focusing on quality over marketing. Their wines offer incredible value, delivering the complexity and mineral precision that defines great Chablis at a fraction of the cost of more famous producers.

The wine's crisp acidity and mineral backbone make it a classic match for oysters and shellfish, echoing the ancient marine fossils in Chablis soils. Its medium body and textural complexity also complement roasted chicken, grilled fish, and creamy goat's cheese. The lemon and buttery notes pair beautifully with dishes featuring herbs like tarragon or chives, while the mineral finish cuts through rich sauces without being overwhelmed.

Serve this Chablis well-chilled at 10-12°C to highlight its mineral precision and crisp acidity. The 2022 vintage is drinking beautifully now but will develop additional complexity over the next 3-5 years when stored properly in a cool, dark place. Decanting isn't necessary, but allowing the wine to warm slightly in the glass will reveal its full aromatic complexity and the interplay between fruit and mineral elements.

The textural style indicates this Chablis has substantial mouthfeel and weight beyond simple crisp acidity. This comes from the wine's contact with fine lees during fermentation, which adds richness and a subtle creaminess while maintaining Chablis' characteristic mineral drive. The result is a wine with both the refreshing qualities of classic Chablis and enough body to pair with more substantial dishes, creating a more complex drinking experience.
