This is a stunner, the real deal right here. Michael Hutton has been around wine in Margaret River his entire life and makes some of the best small batch chardonnay in the entire country.

Why do we love this wine?

That’s not an exaggeration. This is his top wine, the Triptych Reserve. It comes from a single vineyard in Wilyabrup, the ‘golden mile’ so to speak of Margaret River. Handpicked Gin Gin and Clone 5 grapes were picked in the cool of night before undergoing a gentle whole-bunch press and wild barrel ferment in 28% new French oak. After eight months in barrel, the wine was bottled and less than 100 cases were produced. My own notes from the tasting table: excellent, minerally, beautifully integrated oak, vivid acid, nutty but linear, lemon, subtle honey, mascarpone, sherbert, powerful but without heft. It’s always a pleasure to taste a wine that’s light in alcohol that also delivers flavour. There’s some gold to the colour, then into ripe lime, almond, aniseed and green herb, some ginger and spice, subtle matchstick. It’s tight with ripe lime, pink grapefruit and barely ripe pineapple flavour, a fine firm chalky texture, some nougat and oatmeal creaminess, juicy acidity, and offers a finish of particularly distinguished length and high definition. Classic Hutto.

The Triptych Reserve represents the pinnacle of single-vineyard expression from Wilyabrup's 'golden mile'. Unlike many commercial Chardonnays, this wine undergoes wild barrel fermentation with indigenous yeasts, creating more complex flavours and textural depth. The combination of Gin Gin and Clone 5 clones adds distinctive character, while the restrained 28% new French oak allows the terroir to shine through rather than masking it.

Small-batch production allows for meticulous attention to detail that's impossible with larger volumes. Every bunch is handpicked during cool night hours to preserve aromatics and acidity, then gently whole-bunch pressed to extract only the finest juice. This artisanal approach, combined with sourcing from a single exceptional vineyard block, naturally limits quantities but ensures each bottle represents the very best expression of the site.

Wild fermentation using native yeasts creates greater complexity and textural richness compared to commercial yeast strains. This traditional technique develops the wine's signature minerality and nutty characteristics while building natural acidity and structure. The process is slower and less predictable, requiring expert winemaking skills, but results in wines with more authentic terroir expression and longer ageing potential.

The wine's powerful yet elegant structure pairs beautifully with rich seafood like lobster thermidor or pan-seared scallops. The minerality and acidity cut through creamy sauces, while the oak integration complements roasted chicken or pork with herb crusts. The lemon and mascarpone notes make it exceptional with aged cheeses or dishes featuring truffle and mushroom elements.

Premium Margaret River Chardonnays like this typically peak between 5-8 years from vintage, meaning this 2019 is approaching its optimal drinking window now through 2027. The combination of natural acidity, quality oak, and concentrated fruit provides excellent cellaring potential. While delicious now, another 2-3 years will allow the oak to integrate further and develop more complex honeyed and nutty characteristics.
