Modern chardy is a thing of beauty, flinty and delicate up front but then it's those rich citrus and stone fruit notes that we love form the variety. Sprinkle some toasty spice from the oak and we're in heaven.

Why do we love this wine?

We could ramble on for days and days about why we love chardonnay, especially the wines coming out of Margaret River but here it's the finer details that get us (and the critics) excited and ticking all of the boxes. Coming in at 12.5% and with those cool breezes of the region you just know this is going to be a lighter, more refreshing style of chardy with loads of acidity that will get us coming back for more and more. Delving deeper, the use of new and old oak with stirring of the wine during fermentation gets us salivating with layers of complexity popping out of the glass and on the palate. Finally, barrel selections has ensured only the most balanced, complex and complete wine is bottled.

Frequently Asked Questions

At 12.5% alcohol, this Williams' Block Chardonnay represents a more restrained, elegant approach compared to many Margaret River Chardonnays that often reach 13.5-14%. The cooler maritime breezes of the region allow for extended hang time while maintaining natural acidity, resulting in a wine that balances richness with refreshing drinkability. This lower alcohol style is becoming increasingly sought after by wine lovers who appreciate complexity without the weight.

The combination of new and old oak barrels, along with lees stirring during fermentation, creates a sophisticated textural complexity that elevates this Chardonnay beyond simple fruit expression. New oak contributes subtle vanilla and spice notes while old oak allows the fruit to shine through without overwhelming it. The lees stirring adds a creamy, almost cashew-like richness that complements the wine's natural acidity and enhances its full-bodied palate weight.

The consistent 95-point ratings from both Halliday Wine Companion and Wine Orbit reflect the wine's exceptional balance and complexity for its price point. Critics particularly appreciate how Jilyara has achieved layers of flavour through careful barrel selection and winemaking techniques while maintaining the fresh, vibrant character that makes Margaret River Chardonnay so distinctive. The wine demonstrates that Australian Chardonnay can compete with the world's best when terroir and technique align perfectly.

The wine's full body and cashew-like richness from oak treatment make it perfect for creamy seafood dishes like lobster thermidor or pan-seared scallops with cauliflower puree. The bright green apple acidity cuts through rich sauces while the guava notes complement tropical-influenced cuisine and roasted chicken with herbs. Its balanced structure also makes it an excellent match for aged hard cheeses and dishes featuring mushrooms or truffle.

Serve this Chardonnay at 10-12°C to showcase its complex aromatics and balanced acidity without muting the subtle oak influences. While delicious now, the wine's structure and acidity suggest it will develop beautifully over the next 3-5 years, gaining more honeyed complexity while retaining its fresh fruit character. Store bottles on their side in a cool, dark place, and consider decanting for 15-20 minutes before serving to allow the wine to open up fully.
