This is a producer who routinely knocks it out of the park - their stylistically perfect, speaking to both region and varietal to a T. If you were to close your eyes and conjure an image (with your tastebuds) of what you want Margs chardy to be, this is it.

Why do we love this wine?

Hazelnut, almond dust, some cashew butter - this has the makings of an iconic Mofo wine. There is a bristle of Myer lemon acid that gathers on the guns and really sets the wine alight. The sheer amount that is going on in this wine is something to behold. While full and rich the freshness prevails throughout; mouthwatering and persistent from start to finish. This Margs chardy through and through.

Frequently Asked Questions

This Chardonnay showcases the textural complexity that Margaret River is famous for, with distinctive nutty characteristics from hazelnut and almond dust notes. The wine demonstrates how cool climate Chardonnay can achieve full-bodied richness while maintaining vibrant acidity. The Meyer lemon backbone provides the structural tension that prevents the wine from becoming overly heavy, creating a perfect balance between opulence and freshness that defines premium Margaret River Chardonnay.

Serve this Chardonnay slightly chilled at 10-12°C to allow the complex nutty flavours and citrus acidity to shine through properly. The full-bodied nature means it can handle richer foods like roasted chicken, lobster with butter sauce, or aged hard cheeses. Decanting isn't necessary, but allowing it to warm slightly in the glass will reveal more of the cashew butter and almond characteristics that make this wine so distinctive.

A 95-point rating from Wine Orbit places this Chardonnay in the exceptional category, indicating it's among the top tier of Australian white wines. This score reflects the wine's complexity, balance, and aging potential - wines at this level typically develop beautifully over 5-8 years. The Five Star rating from the same publication reinforces that this represents outstanding value and craftsmanship from Wills Domain, a producer recognised for consistent quality in Margaret River.

This 2021 Chardonnay has excellent aging potential due to its structured acidity and full-bodied framework, typical of premium Margaret River whites. The wine should drink beautifully now through 2028-2030, with the nutty characteristics likely to develop into more complex honeyed and brioche notes over time. The Meyer lemon acidity will help preserve freshness while allowing the wine to gain textural complexity and integrate further with proper cellaring conditions.

The rich, nutty profile and full body make this ideal for dishes with similar weight and complexity - think pan-seared scallops with cauliflower puree, roasted pork belly with apple, or creamy mushroom risotto. The vibrant acidity cuts through rich sauces beautifully, while the cashew and almond notes complement dishes featuring nuts or brown butter. Avoid overly spicy foods that might overwhelm the wine's elegant citrus and nut characteristics.
